Gucci Osteria Florence presents the second appointment of the Culinary Carousel series that celebrates multicultural cuisine, with Chef Virgilio Martinez of Central, Lima. He joins Co-Executive Chefs Karime López and Takahiko Kondo, and Chef Massimo Bottura from legendary Osteria Francescana, to create a surprise menu that investigates 6 local products and their connection to their habitats and that of his native Peru.

World-renowned Peruvian Chef and restaurateur Virgilio Martinez comes to Florence for one special evening, bringing with him his culinary philosophy of ‘exploring everything that is “outside”‘, a deeply investigative approach to food and the environment that has put him among one of the most successful ambassadors of Peruvian cuisine on a global scale.  

A 6-course menu will take guests through an unexpected series of conversations between Italy and Peru, with each dish focussing on one ingredient and its link to ecosystems familiar to the Chef.

Chef Martinez is best known for his critically acclaimed flagship restaurant Central, Lima, where dishes become a journey throughout the diverse ecosystems of Peru at different altitudes. In 2013, he co-founded Mater Iniciativa, to continue his research, interpretation and experimentation of Peruvian ingredients. Among his many ventures are Mil, an investigation hub and a place for Chef Virgilio to continue developing his vision and dream of showcasing diversity to the world, casual eatery MAYO, gastronomy movement Momento Mater, restaurants Olluco (Moscow), and Maz (Tokyo).
